For a starter, try crispy home-made tofu that melts in the mouth. The dish can be shared between two if you’re looking to save room for the main course. The foie gras sauce and shiitake mushrooms complement the tofu well and offer an interesting blend of flavours. As a main course, sea bass served in a delicious mushroom and bacon ragout with yuzu ponzu sauce is very satisfying. So too is beef tenderloin with red cabbage, eggplant and black pepper, the beef being cooked to succulent pink perfection. As an alternative to red meat, recommended is the signature dish of juicy Bresse pigeon served with daikon, mustard seed and dashi. Conclude your meal with the wonderful apple tarte tatin. Made with a pleasingly delicate layer of pastry, it is paired with a generous scoop of vanilla bean ice cream. Utterly delicious, it is definitely worth the 20-minute wait.

An extensive international wine list is offered as well as a premium range of bottled waters, which is where the establishment gets its name from.
