WHAT TO ORDER? Making America Great Again—chef Dan Bark’s creations reflect the ethos of America, a melting pot of diversity where flavours, ingredients and ideas come together harmoniously in each dish. There is no a la carte menu here but a 10-course service with the option of craft beer pairing is a must. Start with Alaskan king crab with kalamansi, coconut and cucumber, a delightfully refreshing dish because the cold cucumber granita mixes in with the milky coconut and citrus flavours to bring out the freshness of the crab. Follow with a comfort dish of potato with bacon, cheddar and leek. The flavours are reminiscent of a classic baked potato creatively re-imagined. Honeydew salad offers simple Italian goodness with salty prosciutto, balsamic and a white truffle oil. For the main course, beautifully marbled wagyu beef served with broccolini, lotus roots and radish will satisfy. To end try mango with kaffir lime and basil, a refreshing combination of sweet, sour and bitter flavours.
