WHY GO? This Tokyo-tiny sushi bar’s chefs assemble and serve before your eyes some of the more ultra-fresh sushi offerings using ingredients sourced and flown in from Japan. The ambience is tranquil simplicity and the service extremely attentive. You must book ahead.

WHAT TO ORDER? Umi’s menu constantly changes, depending on what has most recently been pulled from Japan’s seas and grown in its fields. There is a 12-course menu and a 17-course menu, both of which make for a rich and complex predominantly seafood adventure, with mostly raw but some cooked offerings. This two-hour culinary parade includes octopus, creamy monkfish liver and the distinctive shirako, which is cod sperm and something of a psychological challenge for many, but well worth the effort for its uniquely salty-sweet flavour. Top quality tuna belly, Hokkaido sea urchin and much more seasonal produce is also on the menu. Finish with the traditional egg cake enjoyed with sweet charcoal ice cream and a cup of strong hot black tea.

Drinks A small selection of wines is available. Japanese beers and more highly recommended sakes take centre stage, but then these are the best choices to complement the fine fare.
