WHAT TO ORDER? Matsusaka gyu houba-yaki is for devoted wagyu beef fanatics who will be stunned by its presentation atop a burning grill and intrigued by its mushrooms and other adornments. Similarly splendid is salmon houba-yaki, also on a cube-shaped clay grill and swimming in a dazzling sauce with vegetables. If you like soft, grilled duck with light vegetables, go for aki-gamo no kami-nabe, which arrives cooking in a broth over a flame. Gindara nitsuke simmered black cod doused in sweet ginger soy sauce is a tender affair served with green beans, mushroom, tofu and other pleasures. If you’ve never had kuzukiri, then try this fun dessert to finish. It comprises wet, chewy, chilled glassine noodles made from kudzu leaves. Semi-fried yoghurt is also cool with three flavours in three slabs of ice cream.
