WHY GO? Omakase aficionados will love this small establishment hidden under Athenee Tower. It serves one of the best omakase and sake or champagne pairing experiences in town. Polite kimono-clad servers are always on standby and the service is impeccable.

WHAT TO ORDER? Chef Toshi Onishi and his team will take you on an extraordinary culinary journey. The meal starts with two appetisers, the cold one being pen shell clam and firefly squid in ponzu jelly. It is followed by braised baby abalone with abalone liver sauce. Then meticulously prepared and presented pieces of sushi flow. Each mouthful is delicate, fresh and full of flavour, from white fish moving to darker flesh such as golden eye snapper, amber jack (kanpachi), king mackerel, giant sweet shrimp and horse mackerel. These are interspersed with sea urchin (uni) and salmon roe (ikura), jacket fish sashimi, monk fish liver and fresh truffle. The unique Los Angeles style is evident in the charcoaled sea perch, the lightest sword fish tempura served in dachi sauce, applewood-smoked amber jack, seared chutoro topped with caviar, steamed egg custard with hairy crab and a mizu soup that is thick and lobster bisque-like. All are exquisite.

Drinks A selection of superior sakes to pair with the cuisine come from hard-tofind distilleries. There is also a limited choice of champagnes.
