WHY GO? Sushi Ichizu boasts a refined minimalist setting. Using fresh seasonal ingredients flown in from Japan four days a week, chef Riku Toda crafts Edomaestyle omakase dining with elegance.

WHAT TO ORDER? An omakase here is a sophisticated 18-course Edo-style journey. Steamed kegani crab is beautifully presented with simplicity. Its juicy flesh offers a natural sweetness that is enhanced by a dollop of caviar. Grilled unagi bites are served crisp on the skin yet soft inside, its delicate texture well complemented by a bold yuzu kosho paste. Cherry trout, aged for three days, is light yet creamy, which perfectly marries with the rice’s acidity. Plump slices of abalone, steamed in sake, are presented on rice and its thick, umami-rich liver sauce. Kinmedai is made aburi on the skin, giving the sushi a smoky charm that goes exquisitely with a pinch of karashi (Japanese mustard). An omakase is never complete without a silky bite of uni, wherein the night’s special may be the sumptuous bafun. Warabi mochi is freshly made at the end of each course. Delicate in texture, it is served with kinako (roasted soybean) powder, Okinawa sugar cane syrup and pickled cherry blossoms.
