WHY GO? Twins Thomas and Mathias Sühring showcase their German culinary heritage with a contemporary flair. The restored villa, together with the hospitable and knowledgeable staff, complete a wonderful dining experience.
WHAT TO ORDER? The 12-course Sühring Erlebnis menu kicks off with a northern German specialty called labskaus, which is corned beef, mustard, onion and beetroot presented on whole grain bread with pickled herring and quail egg. This is accompanied by a miniature beer shandy. Topinambur tartlet with dried beef and artichoke is another delight. Try the signature storhappen and caviar as an add-on to the tasting menu and indulge in smoked sturgeon sourced from the Royal Project delicately wrapped in buttermilk jelly and served on wholegrain bread and topped with kristal caviar. Then there’s the seven-day aged Hungarian duck, skin-brushed with coffee and a dish of turbot with a succulent seaweed butter sauce. Stellar until the end, a dessert of muesli comes with a surprise element. Mixed with honey-dried and caramelised fruits and nuts, a refreshing apple sorbet is hidden underneath. Also good is omas eierlikor, a homemade eggnog concocted from the twins’ grandmother’s recipe.
Drinks Wine pairings are available with the help of a knowledgeable sommelier. A superb wine list reflects a German theme.
