WHY GO? An elegantly furnished dining room exuding a cosy, almost residential ambience. Diners are able to observe the artistry in the kitchen as their dishes are prepared by chef Jay Sangsingkeaw and her team, ex-staffers at the closed L'Atelier de Joel Robuchon in Bangkok.

WHAT TO ORDER? One must first choose from a trio of set tasting menus at differing price points. The Experience set offers 10 courses of premium imported ingredients and includes several signature dishes, such as a delicate and stylishly composed dish of sea urchin and brown crab with milk-cooked corn topped off with a slightly sweet vanilla foam. Also recommended is a charmingly unassuming signature caviar bun, which explodes with every decadent mouthful, a culinary achievement in itself. Dishes are firmly grounded in French traditions and techniques with nods to other cultures, depending on the season. Whilst many of the ingredients are imported, carefully sourced Thai products such as rice from Sakon Nakhon are used, combined with luxe Mediterranean carabineros in a truly special creation, for example. A perfect end is a meticulously presented dessert trolley offering an array of flavourful bites.
