WHAT TO ORDER? Begin with the dim sum platter for a traditional appetiser. It comprises four familiar and delectably savoury dumpling treats. A good alternative is fish maw soup, which is stewed with bamboo pith and aromatic chinese herbs. Continue with peking-style oven-glazed goose served in two courses. The first features the goose carved at the table for its crispy skin. It oozes unctuous oils and is served with chinese pancakes, scallions, cucumber and a wonderful sweet-sour homemade plum sauce. The second course is down to your preference: the goose meat cooked with black pepper sauce, or minced. The servings are generous and ideal for a group. For a proper feast, order the signature glutinous sticky rice with crab meat and mince pork steamed in a bamboo basket. For dessert try the refreshing chilled chunky mango pudding.
