WHY GO? Critically acclaimed Paste combines the talents of Thai chef Bee Satongun and her husband, Australian chef Jason Bailey. Known for their reinterpretation of Thai cuisine, they creatively fuse age-old customs with contemporary twists to deliver unique, authentic, flavour-filled dishes.

WHAT TO ORDER? Based on numerous old Thai family recipes, creative heirloom cuisine centres on rare Thai produce and the highest quality meats and seafood. Start with khao chae with jasmine flowers, caramelized shallots and roasted river fish, which combines crispy condiments with fresh and fragrant chilled rice. Then try roasted duck, nutmeg, curry paste and sawtooth coriander on rice crackers. Both Thai-Portuguese lotus stem salad of Royal Project crayfish, chicken and gold apple powder, and pomelo salad with char-grilled carabineros prawns, homemade chilli jam and gapi khoei plankton paste present clean and bright natural flavours. Laos-Vieng style sour orange curry with fresh curry paste, caramelised linecaught black cod with roasted mung beans and drumstick flowers synergises into an umami delight. End with ok-rong mango sticky rice roll or sago infused with osmanthus.

Drinks A thoughtfully selected list of wines to match the cuisine’s subtleties and spiciness, particularly aromatic whites from Germany and Austria and reds from the Loire and Rhone Valleys. Wine pairings available.
