WHAT TO ORDER? Chef Bee Bongkoch Satongun says that the 31 flavoured Thai omelette is her favourite item on the menu. This simplest of dishes took her an age to perfect—trial and error with a multitude of spices and herbs offering untold possibilities for variations, it took months before she was happy for it to reach the table. Watermelon, ground salmon with fried shallots and roasted galangal powder needs to be mixed and eaten in large mouthfuls. Old style hot and sour soup has a traditional feel with crisp pork leg, roast tomatoes and fried garlic, but tempered by the smoky chicken broth. Crunchy cured rice balls with sour sausage, kaffir lime zest, red curry paste, river weed and rose pepper is a wonderful mix of complementary flavours, as is singhol slow-roasted goat curry. For dessert, sponge cake mousse is crammed with a gorgeous fruit jelly.

Drinks A fun cocktail menu is available. The well-conceived wine list is overseen by a knowledgeable sommelier.
