WHAT TO ORDER? Nahm’s set menu represents how Thais structure and share a meal. Canapes of blue swimmer crab, coriander and pickled garlic on rice crackers and miang of lobster, chicken, green mango and snakefruit served on a betel leaf boost the appetite. Familiar flavours in the fiddlehead ferns from northern Thailand with Songkhla wild prawn salad in tawai dressing bring nostalgia. Tom yum soup of river prawn and blue foot mushrooms or coconut and galangal soup of chicken breathe a lighter touch. Zesty and savoury main courses such as the rich red curry of duck with snakefruit and sour yellow eggplant, stir-fry of wagyu with young coconut shoots, basil and green peppercorns, and creamy southern yellow curry of blue swimmer crab with betel leaves and calamansi entice and surprise with their strengths. Finish with petit morsels of tropical fruit in scented syrup or pandanus dumplings in fragrant coconut milk.
