WHY GO? This temple of gastronomy at The Dome affords a spectacular view of the city. The finest ingredients are sourced from artisanal growers and innovatively presented by chef Ryuki Kawasaki with an attention to detail that echoes his origins.
WHAT TO ORDER? The inspired tasting menu offers multiple choices enabling diners to experience variety. A lacquered four-box combo of stunningly presented canapes arrives and each tastes exquisite. Notsuke scallop carpaccio with shrimp and beluga caviar is followed by a choice of plump, sweet Magaki oysters or tender veal sweetbread with crunchy Kyoto carrots. Both dishes have intelligent accompaniments balancing texture and accentuating flavours. Brittany blue lobster is lightly poached in rich creamy bisque. Fish dishes follow, as does a signature of Barbary duck in a light multi-layered consomme. Meats continue with the renowned Niigata Murakami wagyu grilled over white charcoal, lending it a unique taste. Alternatively, a stellar Yezo Shika deer cut is crusted in blackcurrant and drizzled with a ribbon of velvety poivrade sauce. Desserts and petit fours are pictures in themselves and burst with flavour.
Drinks The wine list is a true tome with several rare vintages. The by-the-glass offerings are extensive and pairings are thoughtful.
