WHY GO? The Four Seasons at its splendid best. From the moment of arrival through the entire meal taking in setting and dining, you are made to feel very special.

WHAT TO ORDER? Khao is designed to honour the food of the region, whether it is Thai, Lanna, Yunnanese or Burmese. Let the chef guide you through this ambitious menu, which is sectioned by traditional methods of cooking rather than ingredients. There are six types or rice to choose from as well as some rice wine cocktails in honour of the eponymous restaurant. Once the decision has been made, go Thai style and order a selection of dishes including the flavourful wing bean salad with chilli lime-fresh coconut dressing and river prawns, organic Khao Yai minced chicken, shrimp paste and spices served with garden relish, Thai pomelo salad with black crab jelly, lemongrass roasted shallots and dried shrimps, and Doi Inthanon sturgeon with turmeric paste curry, galangal, granny smith apple and seaweed caviar. The stunning finale of any meal here should be warm sticky rice porridge with warm durian, a gentle approach to the king of fruits.

Drinks A very comprehensive wine list covering Old and New World regions with some impressive vintages mixed in. There are some more affordable house wines.
