WHY GO? Championing sustainable and free-waste concepts, the restaurant’s tasting menus combine home-grown local ingredients with innovative gastronomy. Helmed by chef Deepanker Khosla, each dish is an inventive homage to his Indian roots.
WHAT TO ORDER? The journey begins with tiny galauti cornets with wild mushrooms, spices, truffles and citrus gel followed by a succession of excellent bites. The meticulously constructed oyster and corn tartare is presented on a thin crust of brioche. Local oyster, cilantro, corn and yuzu lemon is a great combination. Golgappa is another creation bursting with flavours and aromas. It consists of a succulent deboned duck wing and southern Indian curry served with Indian-style sticky rice. Spectacular in presentation, prawn on the rocks has bold, spicy flavours and comes with seaweed and foamy mint and lemon sauce. Me in a bowl, the chef’s take on chicken tikka masala, is topped with a curry sorbet and served with sun-dried peppers and crumpet-like naan bread. Finish the meal with Nadia, a sparkling dessert named after the chef’s first girlfriend, which comprises white chocolate, berries, Indian rose sorbet and champagne gel.
