WHY GO? Traditional and impeccable, Ginza Sushi Ichi serves the freshest ingredients imported daily from Tokyo’s Toyosu market. The two private dining rooms allow diners to get a first-hand experience of the two chefs preparing each bite.

WHAT TO ORDER? Ginza Sushi Ichi offers three different set menus for lunch and two for dinner. For the full experience opt for the omakase set, which opens with three neatly made sashimis. The delicate translucent meat of madai (sea bream) is followed by the flavourful shime saba (cured mackerel) and the firm meat of akagai (ark shell clam). Grilled salmon trout follows. The fish’s sweet meat and natural oil is balanced with the refreshing flavour of ginger blossom. The nigiri selections complement each other, building up from kawahagi (thread-sail filefish), nodoguro (blackthroat sea perch), ika (squid) and nori-wrapped seared scallop to the lean akami (tuna) and the juicy char-grilled chutoro. Ebi (tiger prawn) is firm and succulent and is followed by uni (sea urchin) and ikura (salmon roe) on sushi rice. End with a dessert of salt ice cream waffle or fresh strawberry mochi with red bean paste.

Drinks The drink list features numerous varieties of sake. A small but selective choice of fruit liquor and sochu is also available, as well as red and white wines, whisky and beer.
