WHAT TO ORDER? To get the most out of this style of cuisine, order a range of dishes to contrast the huge spectrum of powerful flavours dominated by a profile that is more bitter than sweet when compared to Thai food. Larb seen, diced and spiced raw wagyu rump steak (larb leuad in Thai) is served chilled and with a piquant dressing. Try it with chunky pieces of the world’s most flavourful and heavily herbed sausage, sai oua. Also excellent is a Laos-style som tum salad of tum mak hoong. Gai pen, which is slow-roasted baby chicken with an avocado dip, includes a selection of organic vegetables to add flavour, cleansing freshness and crunch. Much of this fresh produce is sourced from the mountains of Laos. Fish dishes tend to comprise more earthy river fish but the Australian rainbow trout is delicious. Basic desserts and local fruits finish the meal. All is lovingly prepared by chefs with a strong respect for tradition.
