WHY GO? A beautiful Thai-themed restaurant set above lush tropical gardens and pools overlooking the sea. Chef David Eldridge chooses only fresh seafood from the surrounding waters of Koh Samui and choice beef from Thai and French strains that prove great meat can be produced in Thailand.

WHAT TO ORDER? The main menu is cleverly divided between cold and warm elements. Eldridge pays close attention to what is fresh and offered from local suppliers. He chooses trout from the Royal Project, hand processed tofu produced on Koh Samui and cheeses from Chiang Mai. Be sure to try his hand-made tortellini with fresh local blue crab or tuna carpaccio flavoured with preserved lemon, semi-dried tomatoes, kaffir lime and sprinkled with olive oil and micro greens. From the grill comes a variety of offerings including excellent Thai/French beef cooked to suit. Particularly good is the signature organic 500 gram T-bone. Both pork and chicken options are raised on local free-range farms, adding to the flavours. If you appreciate table settings and condiments, Full Moon offers a number of special selections from choice of steak knife to a range of exotic table salts.

Drinks The 90-label wine list has the Wine Spectator’s award of excellence. But don’t miss one of the signature cocktails featuring Tres Magueyes tequila.
