WHAT TO ORDER? Begin with a specialty of grilled king crab, the flesh juicy, seasoned with miso and lime and decadently dressed with sea urchin. Alternatively, try the panseared scallops, pearlescent in lustre, bathed in a creamy lobster bisque and topped with slivers of earthy black truffle. Main courses offer vegan options that include innovative risottos such as phytoplankton with capers, lemon and parsley, which perfectly complements the micro-plant flavours. An extensive choice of dishes for carnivores include the stalwart Japanese ohmi wagyu beef tataki, the beef lightly seared and accompanied by ponzu miso. Fresh wasabi also helps to accentuate the umami taste. Other globally sourced meats are also offered including iberico pork pluma and Australian salt bush lamb rack.
