WHY GO? Executive chef Christian Martena creates beautiful food in the natural, organic style of Six Senses. The dining area is cleverly spread on 10 different levels high above rocky shores.

WHAT TO ORDER? The menu offers a variety of culinary journeys designed to stimulate every taste by using locally caught fresh seafood and produce grown on Koh Samui. Martena presents this variety on several five- to eight-course tasting menus featuring beautifully presented dishes with unique flavours. Each course comes with a wine recommendation. Notable favourites include the popular smoked egg with white jelly, crispy yolk and dehydrated chicken skin served with ginger chicken consomme, and chargrilled octopus with chorizo chips, squid ink crunch and bell pepper trilogy. There is also an enticing a la carte menu with pan-fried Hokkaido scallops scented with truffle snow or local soft-shell crab with yuzu dashi and avocado, which creates a balance of sweet and sour flavours. Recommended main courses include a dish of grilled tooth fish enhanced by a rich tamarind sauce and crispy betel leaf or the perfectly grilled fresh balsamic glazed Australian beef tenderloin.

Drinks Numbering over 150 labels, the wine selection has been organised to complement the menu offerings. Pairings focus primarily on parallel flavours, aromas and different notes.
