WHY GO? Six Senses Resorts celebrates the environment of each of its properties by growing much of the organic vegetables served in their restaurants on-site. Dining on the Rocks offers a dramatic setting perched on cliffs overlooking the sea.

WHAT TO ORDER? Begin the meal by choosing from a menu of organic and sustainable ingredients sourced locally and abroad. There are a number of selections offered by chef Jeremy Simeon to delight diners who appreciate contemporary international cuisine. The Extremity menu begins with a light celeriac mousse and perfectly prepared baby vegetables joined with a tomato sorbet. This eight-course tasting menu includes a serving of char-grilled octopus with bell pepper trilogy, chorizo chips, squid ink crunch and olive pearls. Then enjoy grilled toothfish with tamarind sauce and crispy betel leaf with green herb pesto followed by balsamic-glazed Australian beef tenderloin with red wine sauce. The feast finishes with coffee'n'chocolate, a mélange of chocolate wave, sambuca-infused crumble, espresso ice cream and licorice. It all serves as a fine example of the clever combinations of flavours and textures that characterise chef Simeon's food.
