WHAT TO ORDER? This is chef Wai Yin Man’s flagship restaurant. Begin your meal with roasted crispy pork. Cooked to perfection, the skin is golden and crisp while the meat is satisfyingly juicy. Also try flavoursome hot and sour soup. Rich and thick, it is a classic that will get the taste buds going. A popular dim sum choice is abalone dumpling, as is steamed salted egg yolk cream bun. Cut into rectangles, a chewy, soft, work-fried turnip cake served with a tasty XO sauce is a mouthwatering dish. If you are in the mood for noodles, try the signature braised abalone with egg noodle in abalone sauce. Peking duck accompanied by ripe mangoes is an unusual combination but the dish comes highly recommended. For the adventurous, conclude your meal with the traditional gui ling gao black jelly concocted from turtle shell extract and herbs.
