WHY GO? Blue by Alain Ducasse, the first foray in Thailand by the renowned Frenchman, overlooks the Chao Phraya River from a glitzy shopping centre. Showcasing exquisite modern fine dining, the restaurant balances style and substance superbly.

WHAT TO ORDER? Under the baton of chef Wilfrid Hocquet, who worked with Ducasse in Monaco and Las Vegas, Blue brings sophisticated modern French haute cuisine to Bangkok. High quality elements from various sources and seasons direct a la carte, set lunch and the six-course Blue Experience menus. Hokkaido scallops are subtly seared with aromatic leeks, comte cheese and black truffle. Phuket blue crab is refined with tomato water gelee and abundantly garnished with gold caviar. A comforting dish of crisply baked vermicelli with prawns and rockfish from Japan comes in a specially crafted porcelain pot. Plump grilled Boston lobster, air-dried gala apple and green curly kale colourfully juxtaposes against a bright cobalt plate. Khao Yai duck roasted a l’apicius for a Roman gourmet, is rubbed with a mix of fennel, pink sichuan peppercorns, cloves, coriander and cardamom for a heady finish. To end try the fluffy hazelnut souffle lightly layered with chestnut praline.

Drinks Sommelier Antoine Simonnet advises on a comprehensive list of French wines. Copious classic cocktails, mocktails and liquors, plus an afternoon tea service.
