WHY GO? Black Ginger is set in a traditional northern Thai teak wood complex with open dining areas beside a lagoon. Possibly the most romantic restaurant on Phuket, it is accessed over water—patrons are pulled by raft to and from shores. It serves distinctive southern Thai cuisine.

WHAT TO ORDER? Chef Anongrat Meklai has spent 32 years directing the kitchens at The Slate. She has been a guest chef in Europe and cooked for royalty. At Black Ginger she offers her favourite Thai tastes, both traditional dishes and those she has adapted for her international guests. The menu has a strong emphasis on local fresh seafood, including a light crab meat curry with fragrant cha plu leaves accompanied by rice noodles. The chef also likes to use sweet and spicy Phuket tamarind sauce on both braised local prawns and as an accompaniment to a grilled Canadian lobster. The refreshing smoked eggplant salad is tossed with fresh prawns, Thai herbs and fresh lime juice. Another enjoyable light salad is made of local fresh green mango and sun-dried baby prawns tossed with cashew nuts. Curries, piquant soups and rice and noodle options will also delight.
