WHY GO? This chic restaurant, one of a number launched by former pro snowboarder, Korean chef Akira Back, is located on a lofty floor of this international hotel. The extensive menu offers an intriguing selection of dishes with Japanese and Korean influences
WHAT TO ORDER? One simply must begin with the signature tuna pizza, an elegant layer of tuna dressed with umami aioli and white truffle oil scattered with micro herbs topping an exquisitely crispy thin mini pizza. Follow this with a choice of sashimi including fatty tuna, salmon and yellowtail or alternatively choose one of the house special sushi rolls from a variety of options which include combinations of crab, prawns and eel, several in fluffy yet crunchy tempura batter. A recommended appetiser of ishikaya consists of slivers of prized A5 kagoshima striploin cooked at tableside on a pork fat brushed hot stone, the meat truly melt in the mouth. Main courses such as wagyu short rib roasted for 48 hours impress, as does panseared halibut in a velvety butter sauce, a fish lover's delight. Desserts include an uber decadent chocolate souffle partnered with a sublimely smooth vanilla bean ice cream.
