WHY GO? After a complete revamp, 80/20 offers a spacious setting that is refined, yet still possessing rustic charm. With the a la carte option now no longer available, expect seasonal tasting menus.

WHAT TO ORDER? While the restaurant’s experimental nature and support for local ingredients remain at heart, the new 80/20 delights dinners with more sophisticated renditions of Thai-inspired comfort fare. Expect explosive bites such as the exquisitely spiced goat tartare wrapped in a delicate crepe of fermented rice coconut. Inspired by the spicy khua kling, a curry puff filled with intense yet incredibly juicy banana blossom stuffing is a brilliant match for the accompanying black banana sauce. Tiger prawn crudo is beautifully presented—the dish’s winter citrus vinaigrette is incredibly refreshing, while savoury coconut crumbles offer added texture. For the main course, a dream of Trang BBQ pork highlights super crisp pork belly topped with fermented garlic. Full-flavoured, the signature dish is served with mushroom-infused sticky rice and house-made chilli sauce. Desserts stand out, a favourite being a platter of luscious duck egg custard with pumpkin.

Drinks A small list of wines is available in addition to pairing options. Also expect surprises such as the house-fermented rice wine (sato) and cocktails created by Vesper’s head barman.
