WHY GO? Located in the Charoenkrung area, 80/20 by the dynamic duo of chef Napol Jantraget and his wife chef Saki Hosino serves contemporary interpretations of Thai classics with funky flair. Try the new-format degustation menu.

WHAT TO ORDER? 80/20 not only refers to the ratio of local and imported ingredients but also the fusion of Thai, Japanese and European techniques. The menus are driven by seasonal produce sourced from organic farms. In the Summer menu, the amuse bouche encompasses crispy betel leaf, spicy duck sausage and pla haeng taeng mo, a variation on an old Thai summer dish of fresh watermelon sprinkled with shavings of cured tuna. River prawn rocks in the concentrated panaeng curry with cashew nut puree. Smoked pork ribs are cut with pickled strawberry, pineapple and gremolata-like grated star gooseberry. Thai wagyu beef comes in three modes: grilled with jaew sauce, marinated and sun-dried, and as a larb accompanied by sticky rice and salad greens. Hosino's inventive desserts shine. Fashioned into frozen honeycomb by liquid nitrogen, honey mixes beautifully with marian plum ice cream.
