Located inside the first Kimpton hotel in Asia, The Tavernist’s bold approach to food reflects the US hotel brand’s ambition to make a mark in the region. Inspired by his travels, the menu is chef James Sharman’s take on Taiwanese street food with a modern twist.

Having trained under the likes of Tom Aikens and Noma’s Rene Redzepi, Sharman is taking local eats to the fine dining table through innovative creations such as taro and cognac baked alaska and fried chicken with roasted kelp. Also worth mentioning is the Sharman’s signature from his One Star House Party days—chicken breast cooked with barley, chervil and smoked egg yolk.
