Element’s skillful culinary team, helmed by executive chef Onno Kokmeijer, proudly announces their collaboration with Ciel Blue’s culinary team of the Hotel Okura Amsterdam to present high quality Hokkaido salmon, straight from the pristine oceans of northern Japan, in sophisticated French cooking styles.
This culinary marriage of East and West begins on September 1, and you can expect dishes like salmon rillettes on crunchy, toasted brioche with fragrant fennel, ikura and pickled ginger; olive oil poached tender salmon dolloped with citrusy yuzu; and steamed salmon with green tea velouté accompanied by soya beans, kinako and asparagus.
