Iris, Hardangerfjord, Norway
Newly opened in June 2023, Iris is located within the floating art installation Salmon Eye, allowing visitors to immerse themselves in the mountains and surrounding fjord. The experience begins at the town of Rosendal, where guests are taken by boat to Hardangerfjord, where the multisensory underwater experience commences.
Curated by Danish head chef Anika Madsen is a story-like menu that addresses concerns towards the global food system using local and sustainable produce from the surrounding mountains and sea.
