The Australian leading sustainable chef, cookbook author, and restaurateur will be leading his first restaurant outside of Australia with an ethically-sourced seafood concept

As if Singapore couldn’t boast any more culinary luminaries, the dining city is set to receive another icon in the dining scene as restaurateur, chef, and cookbook author Josh Niland makes his way to Singapore from Australia. He will be helming the signature restaurant at The Singapore Edition, the first luxury boutique hotel by Edition Hotels in Southeast Asia, when it opens its doors in November 2023.

At The Singapore Edition, Niland will be helming an ethically-sourced seafood concept where he will redefine what it means to be a sustainable seafood-focused steakhouse on these shores. With fish rib-on-the-bone cuts and crown roasts, the à la carte restaurant will be an extension of Niland’s fin-to-scale philosophy—of eating the whole fish, offal and all—developed from his debut Sydney fish eatery Saint Peter that gained traction in 2016 for its cooking techniques usually reserved for meat (such as dry-aging) and its innovative use of offal. Not much is released about the restaurant, but we do know that Old World elegance will be a part of its charm, while creating a circular economy within the restaurant and lobby bar.

Besides Saint Peter, Niland is also the owner of The Fish Butchery in 2018, a retail market concept selling sustainable fish species, and Charcoal Fish in 2019, a beachside takeaway concept offering quality fast food. A writer of multi-award winning cookbooks The Whole Fish Cookbook, Take One Fish and Fish Butchery (released August 2023), he has also worked previously at the hallowed three-Michelin-starred The Fat Duck. Niland joins The Singapore Edition at its new location in the downtown Orchard area, which promises to be an exciting lifestyle destination with five restaurants and bars, 204 rooms, and over 681 square metres of indoor and outdoor meeting spaces.
