Following our chairman's recent piece on how well some of Thailand's top tables cater to plant-based eaters, Cote at Capella is the latest addition on the nice-to-vegans list

So you have been tasked at creating a plant-based menu for your friends. Where do you start? The ingredients? And then what? What do you do to plant ingredients to make them both look and taste amazing? Perhaps a good example or some culinary inspiration from professional and passionate chefs is a good place to start.

I recently wrote about my plant-based dining experiences with fine dining restaurants, and now I am adding Cote to the list after having just visited for a Christmas lunch. Slightly peeve initially that my tasting menu meal was priced the same as my partner's meat-based tasting menu, once I had seen the work that went into each of my plates I understood why. Go to the head of the table, Cote. That meal is going to take some beating but rest assured I will keep looking in 2021.

For now, I leave you with what chef Davide Garavaglia of Cote and his team at Capella Bangkok cooked up for their X-mas season plant-based tasting menu.

Amuse bouche of spinach and eggplant
Plate 1: Corn chip and shaved chestnut
Plate 2: Truffle and leaves
Plate 3: Pasta and pesto
Plate 4: Endive, apple, carrot, orange juice and cracked rice
Plate 5: Eggplant, spinach and mushroom
 

Price for the Christmas lunch tasting menu: 4,000-5,000 baht per head without wine pairing.
